I don't think I've ever been kicked offline for an update. You can usually remain in the lobby you were in before the update started, but if you try to change or load a new job then it'll kick you until you've done the update.

The updates themselves used to be once a month or once every two months, but I believe they're less frequent now. It's definitely not like some games that spend more time offline for updates than they do online.

As far as I know @Skorpion is right.

Players manage to keep snow in their game by ‘staying in game’ for over a week. You just can’t leave your session.

As for major updates, I don’t know as they may be handled differently.

One person at GTAF kept their snow for months. 
 

The game never kicks people out for updates plus there hasn’t been one for some time now.
